The Mossto process is an innovative method that utilizes the liquid by-product of previous coffee fermentations, known as "Mossto", to enhance the fermentation of a new batch of ripe coffee cherries. After harvesting, the cherries are macerated in the Mossto, which contains sugars, acids, and active microorganisms that aid in breaking down the mucilage of the fruit. The Mossto process can lead to more fruity notes, body, complex acidity, florals, and hints of spices - The affect in this Gesha is an extremely clear and luscious expression of floral Hibiscus and lemon like acidity, that cascades into a complex and creamy finish - hence why Victor named it a Gesha "Floral"

Victor Contreras is a Honduran coffee farmer and associate of COMSA (Café Orgánico Marcala Sociedad Anónima), a renowned growers' association based in Marcala, Honduras. He is recognized for his unique approach to coffee cultivation, incorporating organic, biodynamic, and even metaphysical techniques on his farm, Finca Archanos, located in the El Granadillo region of Marcala, La Paz Department. 

His farm, "Archanos," derives its name from a profound respect for the earth's knowledge and its inherent secrets, which Victor and his family integrate into their farming practices. He believes that coffee plants are part of a larger organism that holds its own memories, a belief that shapes his cultivation lifestyle. He describes this organism as an "astonishing and incomprehensible plant kingdom". 

Dedication to these innovative and holistic methods has resulted in exceptional coffee quality and healthier land. His coffee receives certification as Fair Trade (FT FLO/USA) and Organic, showcasing his commitment to ethical and sustainable production. He has also diversified his processing methods, now offering washed, honey, and natural processed coffees annually.
